Ullage
The gap between the bottom of the cork and the top of the liquid in a bottle of wine. In a young wine, the ullage should be small, about the middle or upper neck of the bottle. The ullage usually increases as the wine ages. The term can also apply to the unfilled space in a wine barrel or tank. (Also known as headspace.) |
