Oak
A type of hardwood commonly used for building wine barrels. American oak has a distinctive, bourbon-like flavour but French oak flavour is much more subtle. Both types of oak barrels contribute tannin and vanilla flavours to wines during aging.

Oaky
Excessive oak flavour in a wine.

Oenology
The study of wine and winemaking.

Off flavours
A tasting term used to describe undesirable flavours perceived by the mouth.

Off-dry
A tasting term used to describe wines that are very slightly sweet.

Oxidised
A term to describe a wine that has been spoiled by exposure to oxygen. During oxidation, wine loses its fruitiness and takes on a darker brownish colour and a sherry-like nose.
