Lactic acid
An organic acid produced in wine during malolactic fermentation, where strong malic acid is converted to softer lactic acid as found in milk.

Late harvest
Also known as late picked, the name given to dessert or full-bodied table wines made from overripe grapes.

Lees
Sediment that occurs during and after fermentation, consisting of dead yeast, grape seeds and other solids. Wine is separated from the lees by racking.

Legs
Common term for the colourless "tears" or liquid rivulets that cling to the sides of a glass after the contents have been swirled. The presence of legs are an indication of alcoholic content.

Length
A tasting term used to describe the sustained sensory impression of the wine across the tongue.
