Hard
A tasting term for a wine that contains too much tannin and is therefore unpleasant. Hard wines often take a long time to mature.

Harmonious
A tasting term used to describe wines that are well balanced and express themselves gracefully.

Headspace
The air space in the bottle between the wine and the closure, or in a tank between the wine and the lid.

Herbaceous, herbal
Flavours reminiscent of herbs, such as fresh herbs, dried herbs or specific herbs. For some wine styles, e.g., Marlborough Sauvignon Blanc, this is desirable.

Hermitage
The name given in Australia for the Shiraz grape, the most widely planted red wine grape in that country.

Hock
Originally an English term to denote wines which came from Hockheim, Germany. Hock is a slang term referring to Riesling-type wines themselves.

Hot
Taste sensation often found in high alcohol wines. Table wines with hot taste are unpleasant to drink. Generally undesirable except in fortified wines.

Hybrid
A viticulture term meaning a new variety resulting from crossing two other (often very different) varieties.

It's a Fact!

FOUNDING FATHER
Acknowledged as Kaikoura's founding father, Captain Robert Fyffe established the first whaling station in the area in 1842. Fyffe had worked for a number of years as a whaler in the Marlborough Sounds. However, disappointed with results, he moved south to establish the Kaikoura station "Waiopuka", building huts and sheds, and employing forty men. Other whaling stations soon followed, but as whale numbers declined, whaling became uneconomic.
